Not so Boring Chicken Salad

Chicken...it is a quick and fairly easy meal option...but do you ever get tired of just Chicken? This is my current favorite way to "mix" it up a bit. It is the perfect blend of sweet from the Cranberries and crunch from the Pecans and Celery. You can almost pretend it is not just chicken for dinner again...



Cook Time: 20-30 Minutes

Prep Time: 10 Minutes

Serves: 4-6


Ingredients

2 Chicken Breasts (Cooked)

3/4 Cup Cranberries

1/2 Cup Pecans

3 Stalks of Celery

1/4 Cup Mayo



Directions

Cook Chicken Breasts and let them cool. (I like to bake them with a little olive oil, pink salt, and pepper. But this part is up to you. You can also use Chicken you have leftover.)


Once Chicken is cool tear it up and place in your food processor. (You can shred the chicken and mix everything by hand, but I like the ease of the food processor) Add Cranberries, Pecans, and Celery. Chop for 15-20 seconds. Add Mayo and pulse until you reach a texture you like (I go 10-15 seconds).


This salad is good right after you mix it up, but it is even better the next day. My favorite way to eat it is on sliced cucumbers (but also great on crackers, or wrapped in a tortilla with a leafy veggie).
